Lemon Blueberry Energy Balls
Serves: 24 balls

Ingredients:
1 cup old-fashioned oats
1 cup sliced almonds
¼ cup chia seeds
¼ cup honey
½ cup dried blueberries
zest and juice of one lemon
Instructions:
In a food processor, process almonds, lemon zest, juice, and honey until smooth.
Add in half of the oats and process again until smooth.
Move the mixture to a bowl and stir in the remaining oats, chia seeds, and blueberries. Stir until combined. It's easiest to use your hands!
Roll mixture into about 1-inch balls.
Store in the refrigerator for 1-2 weeks or freeze for up to 6 months. Enjoy!
